RR: Bubble Up Enchilada

Bubble Up Enchilada

1 pound extra lean ground beef
1 (10 ounce) can enchilada sauce
1 (8 ounce) can tomato sauce
1 (4 ounce) can sliced black olives, drained
1 can reduced fat refrigerator biscuits
1 ¼ cups shredded Weight Watchers Mexican Cheese

Preheat oven to 350 degrees. Brown ground beef and drain if needed. Mix in a can of enchilada sauce and a can of black olives. Cut the refrigerated biscuits into fourths and stir them in the meat mixture. Then you just dump it all in a greased casserole and bake for 25 minutes. Take out of oven and sprinkle cheese on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.

Serves 8 at 6 WW points each, but your really need to check your points because enchilada sauces can affect the points because they are different and your cheese selection can affect the points too. I used Old El Paso Enchilada Sauce and the Weight Watcher Mexican shredded cheese.

RR: I have been wanting to make this a long time. I just wonder why I waited so long. This is wonderful! My kids loved this dish! I will definitely be making it again! I left out the olives because nobody would have eaten it if I had put them in it. I served this with lettuce and sour cream and corn. I will be making this again and I also need to try the bubble up pizza.
