Menu Plan Monday May 10-16- Crockpot Week!

This week, I'm pulling out my crock pot and letting it do the work for me. Hot weather has already been here in Kentucky and suppose to return to the 80's this week, so crockpotting will keep my house cooler. I am also doing a lot of microwave cooking for breakfast, this will also keep my house cooler. So, here's what's planned at my house.


Dinners
Monday: Crockpot Cheesy Chicken Spaghetti, Low-Fat Bread Machine Italian Bread (made into bread sticks), salad
Tuesday: Crockpot Taco Junk with baked tortilla scoop chips
Wednesday: Crockpot Rotisserie Chicken, crockpot baked potatoes (cooked in bottom of chicken), green beans
Friday: Pizza Night
Saturday: Crockpot Chicken and stuffing, Crockpot Baked Potatoes, green beans
Sunday: *New Recipe Night* Pineapple Meatloaf, green beans


Breakfast
Wednesday: Hungry Girl's All American Egg Mug, strawberries
Thursday: Hungry Girl's Egg Mug Classic, strawberries
Saturday: Denver Omelette in a Mug, strawberries

(Note: My kids eat breakfast at school and my little one eats cereal everyday.)

Monday: Bacon Tomato Sandwich, grapes
Tuesday: Bacon Tomato Sandwich, grapes
Saturday: Cookout at church

This week I decided to prep stuff for the week, kind of like Robin Miller does on her Food Network show. I really think it will save time since so many of my recipes use onions and green peppers!

Menu Plan Monday- October5-October 11

This week I am trying something new. On Monday's I'll post my menu and then on Tuesday's I'll show you how much I spend at the grocery store. We have decided to budget $120 a week for groceries, but some week's may be a little more and others may be a little less. I have a family of 6 to feed. I think planning is key to making that happen. It seems really hard to eat healthy meals and spend less at the grocery. So, here's my attempt. My kids are home this week on Fall break, so I have to plan more food because they usually eat those meals at school. We also are celebrating my dh's 40th birthday this week.

Dinners
Tuesday- Headstart Family Fun Night (I'm bringing Pickles and Chips)
Wednesday- Lentil Tacos, Spanish Rice, Corn
Thursday- Soup beans(made with ham bouillon), Sauerkraut with Lite Hot Dogs, cornbread
Friday- Sloppy Joe Casserole, Corn, fruit
Saturday- Spaghetti and Meatballs, Low-Fat Bread Machine Italian Bread(made into bread sticks), salad, Red Velvet Cake with cream cheese icing, vanilla ice cream (This is the meal my dh picked for his birthday: I might be using my 35 weekly points for this meal)

Menu Plan Monday September 21-27

We are going through a major budget change and we will have lots less grocery money so here is what I am doing this week while trying to also eat healthy:

Dinners:
Monday: Cheesy Ranch Burgers, baked potatoes, green beans
Tuesday: Crockpot Brown Sugar Chili,(make double batch and freeze some for Sun.) cornbread
Wednesday: Lentil Tacos on whole wheat tortillas, salad
Thursday: Lentil and Brown Rice Casserole, steamed Broccoli
Friday: Taco Junk, salad
Saturday: Weekday Lasagna, salad, garlic toast
Sunday: Crockpot Baked Potatoes, fat free sour cream, chili (left over from Tuesday)

Note: I got a great deal on potatoes so I'm using them this week and I am going to experiment with Lentils because they are so cheap and the recipes have brown rice which I get on WIC so I can use that up too!

Breakfast: Most days I have one of these: cereal with fruit or omelets with fruit
Lunch: Soup and sandwiches most days

Well this is a day late but I think planning, at least for me, is one of the biggest things that helped me lose weight, so I got to get back in the groove and start doing my menu plans on here. I always plan just don't put it on here and I think putting it on here makes me accountable for it!

Breakfast: Egg Beaters Omelet with Weight Watchers Cheese Single, mushrooms and onions, strawberries or grapes, and 1 pt English muffin (Most days that's what I have) unless I am pressed for time and I do Honey Nut Cheerios, banana, I think this week I will also have Low Fat Waffles with Sugar free syrup and fruit.

Lunch: My plan is Bacon Tomato Sandwiches (1 pt bread with Oscar Meyer precooked bacon that is 1 point for 4 slices, and 1 tbsp. fat free Miracle Whip, grapes, and milk. Other day's I'll have a chef salad and milk with grapes.

We had this program at church last week and I had to make a ton of cookies, none really fit into my diet. I guess they were a little bit healthier since they used whole wheat flour, but still. Biggest Loser Month 2 and Menu Plan Monday March 9-15

Well, here is my weigh in for Month 2 of my biggest loser contest. It must have been a fluke that day because I can't get my scale to say that in the morning the past couple of days, it says 242. something most mornings. Guess that means I gained somewhere. I don't know, but I was glad to see my scale say that. We had to have a comb in the picture this month, so don't ask me about that. I would love to be out of the 240's next month. I don't think I'll ever win a month, because I'm not losing as fast as I did when I started, but I know that that's what is suppose to be happening. On a GREAT note, my starting BMI was 50.7 and now it is 37.6!!!

Biggest Loser Month 1 and My Menu Plan Monday

Well, as most of my readers know, I took another kid for an extended hospital stay. I did a little bit better on hospital food because I planned and brought stuff to help me stay on point. The catch was that my little girl refused to eat anything in the hospital, so I would take small bites of things to encourage her to eat and it did help a little. It just did not help me much, actually I think I gained a couple of pounds. Lack of exercise will do that to you too. So, I am hoping for a really good week this week. I want to get back into the routine and I really think that will help everyone. I rested a whole lot of the weekend and that helped a lot! Here is my weight for the biggest loser(see above), I took it before I left for the hospital because my doctor told me to prepare for possible admission. If you are not in this contest then you will not understand the toothpaste. I think that that just helps everyone stay honest. So, here is what I weighted before going to the hospital. I did not get back until late on Thursday and the weights were due by noon on Thursday. I was nowhere in the running for a prize so I really think it did not matter anyways. So, here is my weight, 243.2! I was so excited! In this contest, I weigh in in the morning, so my weight is a little different than my weekly night Weight Watchers meetings. I've been stuck for months now and getting over 245 was such a big goal of mine. Even though I did not win anything, I am proud of 5.2 pounds for one month. Especially with all of the crazy stuff going on in my life right now. I ate out way too much during my hospital stays. I stayed on plan for the most part and now that is all behind me and I am ready to get back on track! I feel so much better when I do! So I am going to start off by posting my menu! This will help me stay on track this week! I also must EXERCISE!

Menu Plan Monday Jan12- Jan17

I have not done a menu on here for awhile and I got to do better! Menu planning helps me stay on my Weight Watchers plan and helps me spend less at the store. Last week at Weight Watchers, I told them I like to plan out my breakfast, lunches, and dinners. They made me feel like I was in the minority and that I must be some super organized freak! I don't know how I would go to the grocery if I did not take the time to plan my week. I always plan just sometimes it does not get put on here. With a family of 6 you have to plan! Here is my plan for this week.

Dinners
Spaghetti Casserole, salad, toast
Crockpot Brown Sugar Chili, cornbread
Breakfast for dinner
Pizza, salad
Creamy Potato and Ham Bake, salad
Soup and sandwiches
Leftovers night

Lunch
Ham sandwich, apple, milk
Cheesy Vegetable Soup, crackers
Refried Bean Soup
Leftovers
Breakfast
Omelet with added onions and mushrooms on light English muffin, fruit, hot herbal tea (3 days)
Low fat waffles and fruit, hot herbal tea (2 days)
Apple Cinnamon Oatmeal, hot herbal tea (2 days)
