Monday Morning Weigh-In and a New Goal!

Well today is weigh in day and after gaining some ounces last week, I was determined to lose something this week. I not only lost, but I reached my first goal of getting under 300 pounds!!! I weighed in at 299.2 today! Last week I weighed 302.4, so I lost 3.2 pounds! I could not be happier! I reached my first goal. So, now I need to set another goal. I thought about 250, but I think I would really get frustrated with that, so my new goal is to get below 270, that is like about the same amount that I did in this first goal, so I really think it will be a good goal for me. I can't remember weighing 270 pounds. I think probably I weighed that in college, but that was over 10 years ago so for me that would be wonderful. My WW Points also go to 31 points now. That scale right now looks pretty good to me, but I know I got a long road ahead of me! Baby steps are going to get me there!!! Thanks to all of you for being there for me! I really think that the support from this blog has truly helped me.

Losing weight by Blogging

I recently read this article about using a blog to help you lose weight. The article said that many people were using a blog to help them with weight loss. A blog helps you gain a support system right online. I really think that that is exactly what my blog has done for me and why I am so successful in losing weight this time. I said I was starting a blog for accountability and while that is true, I think that the support system it has created for me has helped me more! People sometimes come on here and tell me that I am motivating them to want to lose weight. The article also talks about that. I think starting a blog to help me with weight loss was the best decision I ever made!

Recipe- Crockpot Chicken and Stuffing

We had this this week and it was pretty good.

Crockpot Chicken and Stuffing
~
4 chicken breasts (halves)
1 pkg. Stove Top Stuffing
1/2 cup chicken broth
1 can FF cream of mushroom soup~Spray crockpot with non-stick cooking spray. Place chicken on bottom of crockpot. Pour broth over the chicken. Mix together the stuffing and soup. Place on top of the chicken.Cook on low for 7 hours.
Serves 4

Recipe-Teriyaki Sticky Chicken


We had this tonight and it was really good! It was not the original crockpot recipe that I wanted to do because I could not find light teriyaki, but this one used regular teriyaki and was still simple. This recipe was computed on the WW recipe builder.

Teriyaki Sticky Chicken
~
16 oz uncooked boneless, skinless chicken breast (I used 1 lb chicken strips)
1/2 cup ketchup
3 Tbsp packed light brown sugar
2 Tbsp vinegar
2 Tbsp teriyaki sauce
1 tsp dry mustard
~
Preheat oven to 350 degrees. In a small bowl, combine the ketchup, brown sugar, vinegar, teriyaki sauce, and dry mustard. Spray an 8x8" baking dish with non-stick cooking spray. Place 1/2 the sauce into the bottom of the baking dish. Place the chicken breasts on top of the sauce and cover the chicken with the rest of the sauce. Bake uncovered for 40 minutes, or until the chicken is done and the sauce has thickened. Divide any sauce that is in the dish over each piece of chicken. Very yummy served with rice (but count the extra points)!

We had this for dinner the other night and I served it with a salad, it was super filling. It was also super easy and everyone really liked it. I did not take a picture like I usually do, so until I make it again click on Nancy to see the picture.

Manwich Tater Tot Casserole(From Nancy)

56 Tater Tots
1 lb. lean ground beef
1/2 c. chopped onion
1 green pepper chopped
1 -1/2 c. frozen corn
2 can (16 oz) Manwich
1 -1/2 c. RF shredded cheddar cheese
~
Preheat oven to 350. Spray a 9"x13" baking dish with Pam.Brown ground beef and onion; drain.Stir in Manwich and heat through. Add corn.Arrange Tater Tots in a single layer in bottom of baking dish.Top with Manwich mixture. Sprinkle with cheese.Bake 30-40 minutes.
Yields: 8 servings

Menu Plan Monday Feb 25-March 2

I went grocery shopping today, so I have my menu ready for next week early. Last week we tried the Manwich Tater Tot Casserole and everyone liked it. I bought a big bag of frozen corn and Tater Tots so we are having again so I can use up my ingredients. This week we are trying a new recipe Sesame Chicken, see recipe below. All the other ones are family favorites. Here is my plan for this week:
  1. Manwich Tater Tot Casserole 6.5 points, salad

  3. Chicken Divan-4 points, rice
  4. Busy Day Chicken and Rice 3.5 points, green beans

Treats: I did not try these last time I had them on my plan so I plan to try them again.

Black Bean Brownies- 2 points each(these sound nasty, but everywhere I read, people love them! I think there is also a black bean fudge recipe, who knew you could do so much with black beans that was sweet and tasty?

Sesame Chicken
2 teaspoons sesame seeds
Cooking Spray
4 (6-ounce) skinless boneless chicken breast halves, cut into strips
2 tablespoons honey
2 tablespoons low-sodium soy sauce
¼ teaspoon ground ginger

1. Heat a large non-stick skillet over medium-high heat. Add sesame seeds; cook for 2 minutes or until toasted; set aside.
2. Coat pan with cooking spray; place over medium-high heat. Add chicken, and cook 5 minutes or until lightly browned.
3. Combine sesame seeds, honey, soy sauce, and ginger; pour over chicken, and cook 1 minute or until chicken is done.
Yield: 4 servings (serving size: 4 ounces chicken and 1 ½ teaspoons sauce.)
Per serving: Calories 233, Fat 2.9 grams, Fiber 0.2 grams.

Well like I said in my last post, I knew I was going to gain some. I weighed in today at 302.4. Last week I was 301. 8, so I gained .6 pound. I guess that is not bad, but I am going to do everything I said in my last post to help me do better this week!

Food Log and Exercise Log for Feb17 & Lessons and Goals

Well I learned a lesson today and this week!...I need to eat a better breakfast. I was in a hurry today and only ate a 1 point yogurt and then we do not get home from church until 1:30 so we eat a late lunch. By the time dinner comes around it is later than usual and I still did not eat all of my points. I did the best I could today. I still did not eat all of my points. I seem to be getting in about 28 points and having a hard time getting to 32. I know I have had a rough two weeks and I am going to have a bad day on the scale tommorrow. I know I always say that, but this time I mean it. I think I am going to gain weight this time! :( I would be real suprized if I lose! I also have not been home alot so getting all of my water has been hard too. I can only get back on the train and do better. I am going to stay positive no matter what. This week is going to be better! Here are some small goals for this week!
  • I will get at least 6 cups of water.
  • I will eat my all of my points and eat a better breakfast. (Stop depriving myself!)
  • I will get back on board and do my exercise!
I think those are the big things I am going to work on this week that will hopefully help me get to my first goal, under 300!

Counting Points

Okay. I know several of you who read my blog count WW Points. So here is my question. I bought some fudge pops. Okay it says 2 pops are one serving, but really one is plenty. So, when I go to count it. For 1 bar it is 35 calories, 0 fat, 3 g fiber which = 0 WW points. Can that really be true? If you calculate the serving size of 2 pops, it is 70 calories 0.5 g fat and 6 g fiber. I know though that on WW you can only count 4 grams of fiber per serving so even at 4 grams fiber it is 1 point for 2. So, do you really think that 1 is 0 points? How awesome would that be. It is Blue Bunny Sweet Freedom No Sugar Added Fudge Lites. These were cheaper than the WW ones and I got more pops. Well, I hope some of you know more about counting than me and can answer my question. I just learned this week that you can only count 4 points per serving of fiber for any one thing and I also learned that 0 + 0 does not equal 0 in weight watchers. For example the Progresso Lite Soups which are 0 points per serving well they are 0 points for about half the can, but if you eat the whole can you have to count 1 point per serving because of the calorie count. So, I have eaten almost a whole can sometimes and only counted 0 points. Guess I still got a lot to learn.
I also bought some new WW yogurt flavors. Strawberry Shortcake and White Chocolate Cheesecake. They sound yummy. I can not find the Boston Cream Pie, but some of you have said it is nasty anyways.

Happy Valentine's Day to everyone! Hope you all have a special day! Our church is having a Valentine's Date night. We are all going to eat at the local Chinese Restaurant. It is an all you can eat buffet with seafood and I do not have a clue what any point values will be for anything I eat. So, I am going to have to be real good today so I will be able to eat tonight. Dh says I better eat something because the buffet is $14 a person. So, I know I am going to eat. Also, our church is providing babysitting. They did this for one other time we had a church trip and it was really nice. Well I hope everyone has a great Valentine's Day. Don't eat too much candy. My favorite Valentine's Candy is the Conversation Hearts and I have not had one. Here is my food log for today.

A Valentine's Treat

I made this for my family and we had it after dinner. They all loved it and did not even know it was diet, well dh did but he still ate it all. I also did not have foil liners, I just used paper liners and they worked fine. I saw this several places on the web. Some suggested using a product called Better N Peanut Butter. I did not see that at my grocery though? If you use that these are only 1 point. These are a refreshing treat!
~
1 (8 oz.) Container Fat Free Cool Whip
1/3 Cup Reduced Fat Creamy Peanut Butter
1/4 Cup Hershey's Light Chocolate Syrup

Line a 12 cupcake pan with foil liners. Combine 1 Cup of cool whip with the peanut butter with a whisk. Fold in remaining cool whip. Divide the mixture into the liners evenly (approx. 2 1/2 tablespoons each). Top each cup with 1 teaspoon of chocolate syrup. Freeze. After frozen, remove from pan and place in a freezer bag or container. These are best eaten with a spoon.

Serves: 12Per Serving: 73 Calories; 2g Fat (29.4% calories from fat); 2g Protein; 10g Carbohydrate; trace Dietary Fiber; 0mg Cholesterol; 51mg Sodium.

Here is what I had for dinner


Chunky Tomato Soup
1 (28 oz.) Can Crushed Tomatoes

1 (28 oz.) Can Diced Tomatoes

1 (6 oz.) Can Tomato Paste

1 (10 oz.) Can Tomato Puree

2-4 Cloves Garlic, minced

1 Tablespoon Italian Seasoning

4 Packets Splenda

Spray crockpot with non-stick cooking spray. Mix all ingredients together and place into crockpot. Cook on low for 8 hours.Note: This soup is pretty thick. It also doubles well as a spaghetti sauce.
Serves: 7 (1 Cup Each)Per Serving: 101 Calories; 1g Fat (7.0% calories from fat); 4g Protein; 23g Carbohydrate; 5g Dietary Fiber; 0mg Cholesterol; 514mg Sodium. Exchanges: 0 Grain (Starch); 4 Vegetable; 0 Fat.

This was really good, kind of like a tomato basil soup. Dh did not like it by itself. He ate it with spaghetti noodles and he said it was fantastic that way. The kids ate it as spaghetti too. I really like this low point soup/sauce and will make it again. This is super easy to make too!

3 Fast Miles and Some Changes

I had watched this tape on my computer to see what it was like and I liked it. I have been doing the 2 miles for awhile now and have been wanting to try the 3 miles. Today I tried it and I can say I got through it. It is definately a workout! That workout gets me 4 WW Activity Points. I usually do not use these points just count them and in the future I may set goals as to how many points that I want to get. So, I will be doing this again! I also want to get the 4 and 5 mile tapes. Hopefully I will be able to do them too. I really think that the walking tapes are giving me the extra boost I need to make myself have a better weight loss. Oh and I forgot to say that Leslie Sansone said that you burn a lunch doing the 3 mile and a dinner doing the 4 mile. Wow!

Okay, now I want to tell you all about some changes I have noticed in me since losing the weight.
1. I have more energy than I have ever had during the day. I am ready to go to bed at a decent hour but I have more energy throughout the day.
2. It does not kill me anymore to walk farther to get to the door of wherever I am going. I used to just be so out of breath!
3. I can pick up toys and other stuff off of the floor so much easier, mainly because I believe that my stomach has gone down consideraly.
4. I find myself doing walking steps when I am doing other stuff lol!
5. My exercise outfit, well the shorts fall down on me now, well not all the way, but I am constantly pulling them up. My underware is the same way!

Baked Ziti with Beef

Baked Ziti with Beef (6.5 points)(From Cooking Light) (and Nancy)
~
4 cups Tomato Sauce
1 pound ground round
4 cups cooked ziti or rigatoni (about 2 1/2 cups uncooked pasta)
1 1/2 cups (6 ounces) shredded part-skim mozzarella cheese, divided
Cooking spray
1/4 cup (1 ounce) grated fresh Parmesan cheese
Preheat oven to 350°.Cook beef in a large nonstick skillet over medium-high heat until browned; stir to crumble. Drain well. Combine beef, rigatoni, Tomato Sauce, and 1 cup mozzarella in an 11 x 7-inch baking dish coated with cooking spray. Top with 1/2 cup mozzarella and Parmesan. Bake at 350° for 20 minutes or until thoroughly heated.
Serving Size = 1 cup
Original recipe called for Rigatoni, but all I had was Ziti, this was really good! We will have it again. I served it with a tossed salad.

Counting Weight Watcher Points is Sometimes Confusing to Me!

I have been counting my popcorn wrong! Lol, sometimes I am so stupid not all together there. I counted the popped calories, but was counting the unpopped fat, pretty big difference. The box says that 5 cups popped are a serving, but it gives the calories and fat for 1 cup, they want you to work don't they? 1 cup popped is 20 and the serving size 5 cups would be 100. The popped fat is 0.5 per cup (I had been counting 4 g fat per serving.) so 5 cups would be 2.5 and the fiber I guess is same for popped or unpopped one cup or three I am not really sure? It says 3 grams. So I calculate 5 cups to be 2 points. I had been counting more like 5? Sometimes those food labels are really confusing. My taco dinner that the kids like is the same way, so confusing. Wouldn't it be nice if everything had the WW points on it. I know I am dreaming!
Also, if I spell something wrong, I am sorry my spell checker has not worked on my blogger blogs for about a week?

Monday Morning Weigh-In

Well I weighed in today at 301.8. That is my scale in the photo. The glass seems to make it harder to take a picture with the glare it gets, but I think you can still read it! So, that is a 3.2 pound weight loss for this week. I am really happy with that! It was a really hard week too with birthday and anniversary, so I probably would have lost more if I had not had those. So, this week I am hoping to get out of the 300's!!!!! I planned in some low point treats for Valentine's Day in my menu plan this week to help me stay good. lol! You can see my weight loss ticker if you scroll down, but I have lost 22 pounds!

Look What Dh Got Me!

So, you all know that my anniversary was Wednesday. Here is what dh got me. We usually do anniversary and Valentine's Day gifts together since they are so close and then on Valentine's Day we just give cards. I told him I did not want candy. So, here is what he got me....

I LOVE them both!!! He also took me out to dinner tonight. I ate way more than I should have, but we don't go out a lot and I had only ate 6 points all day so I hope I will be okay. I exercised today and did a super cleaning session so I hope I did not mess up too bad! Oh well. I had a great time!

New Day! I love when I get to start over! I hope to get two 30 minute sessions of walking in today. I do not know right now what we are doing this weekend. We found out what was wrong with our second car, it was the distributor. About a $400 job, but I guess we are going to get it fixed and we should have two cars by early next week. It will be nice to have a car during the day. But, we will not have it for long because then we lose our other car for two weeks because it has to be fixed from the storm damage (a tree fell on it) that cost about $3000, thanks for insurance! 300's

I have this fear that I am never going to get out of the 300's. Really though I have come a LONG way, and I know that! I wanted to be out by the end of this week, but that does not look like it is going to happen, maybe I am wrong, but I just feel like that. Trying to lose weight is harder than I ever thought. Guess that is why it took me forever to make a change? I know that I am doing well and a 100 pounds is a big goal. I just wish sometimes we had this magic wand that would put you at the weight you wanted to be and that you could eat any food you wanted to and there be no consequences. I remember that in a movie, I don't remember the name, but the guy dies and goes to be judged in Judgment City and he goes to eat an dish and by the way, I remember it looking oh so good and they tell him that after you die you can eat as much as you want and it will not change your body. Not that I want to eat that much. I know that since I have started this that I eat smaller portions now because that is what I have gotten my body used to. Well, just some random thoughts for the day. Thinking about meeting my first goal of getting under 300. Everyone is always telling me, "you don't want to lose too fast." Well yes maybe it might be unheailthy but I want to lose weight fast!!! I e-mailed my "skinny" sister my before and after pictures and she was amazed. She told me that even my skin tone looked healthier and that she never thought I would have been able to do it, but I did! I am really excited but I guess you could also say that I am afraid that it really will not happen.

Hi everybody! Today is my anniversary and my last baby's 1st birthday! We really are not doing anything until this weekend though! I plan to do a morning and afternoon workout session today. I am out of so much, but can not go to the grocery until tonight. I miss my morning cereal, it really helps me get to lunch without being hungry. I enjoy the eggs and bacon, but eventhough they are more calories, they just do not keep me full until lunch or a morning snack. I am out of skim milk is why I am not having my breakfast. Anyways, I really need a lot at the grocery so I will definately have to go tonight!

Monthly Pictures

Everyone has been saying they can tell a difference after I have lost 18 pounds. I feel a little different but really did not see it for myself until this picture! So, do you see a difference, other than me being happier?



Monday Morning Weigh-In

I really did not want to weigh in today! I really thought that I did not do good enough to lose anything, yes I stayed in my points, but I just really did not have the kinds of food that I wanted to eat. I got on the scales today and said a little prayer, like that was going to help me! But you know it did make me feel more peaceful about the number. I know you want to know,right? Well, I weighed in today at 305. I only lost 1 pound, but hey I really thought I was going to gain a pound! So, I guess that number don't look too bad. I guess I am just so used to losing at least 5 pounds a week that one pound kind of scared me. I like to read other weight loss blogs they inspire me. One is the WW Chic. She is a WW leader and writes and has really neat stuff in her blog. This week she has an article about 1 pound of fat. Nobody ever wants to lose one pound of fat they want bigger numbers so the one pound of fat just stays around. Makes me kind of think how I felt when it was only one pound. You should go and read that article here. It will really make you feel differently about losing ONLY one pound! So, I celebrate you being gone, you ONE pound!!!!!
This next week I am going to try harder and make sure I exercise!!! I have a tough week because I plan to eat some birthday cake and ice cream! It is my son Neil's First Birthday. I should be able to celebrate my babies first year, right? I guess that is why WW gives you the 35 flex points to be used each week. I try really hard not to use them but this week I may have to use them. Because not only is it my baby's first birthday, but it is my anniversary. My baby was born on our anniversary. So, I got two big things to celebrate this week, but I know I can do it! Lot's of you tell me that I am an inspiration to people who come to visit me, so I guess that makes me feel better. Well, I feel the same way about all of you that visit me. You all really help me a lot! I knew I needed to do something. but I just had not figured out what or how until Tammy stated on her blog that she was starting Biggest Loser and they were doing a format that I love-blogs! So, we all can encourage each other. Thanks to all of you for being there on my BAD days as well as my good days!

I am feeling better!

Well, I really do not even want to do this today. I had an attack on Twizlers, why did dh have to buy them? Anyways I took out my frustration on Twizlers, bad I know that was the old Lorie. I really do not know how many I ate, but I think it was about 10! Yes 10 and 4 is 3 points. So we will see how I do? I feel a lot better. After dh came home, I RELAXED! I took a hot bubble bath and sat in the reclining chair and read a book while my kids napped and also enjoyed a couple of hot herbal teas . It felt so good! So, I am feeling a little better. I am not planning on quitting, but it is so good to know I got some support! I messed up today, but I guess everyone is allowed one of those days, right? Well, I guess I still came within my points even if I ate 10 Twizlers and I still got to eat a good dinner.

I am in a mood!

I am such in a mood. I hate when I get like this, but I am here. I do not think I am going to do well this week at all, but we shall see. I still kept within my points, but I just really need to go to the grocery, I am out of stuff. I have been in the house with the kids for the whole week. I hate only having one car and needing two cars to go anywhere with everybody. Nicholas was sick last night so we did not even go to church, so I just feel like I need a break, really down. And yes this leads to eating more. I have not exercised for three days and that is just so not like me. I tried to get my mil to watch the kids yesterday so we could go somewhere, but she had to work and today she is gone to Lexington to check on her daughter. So, I told dh to call his sister, she told us to call whenever we needed her and her dh answered and said she was still asleep at noon to call back in an hour or so. We called back and nobody will answer, so I guess she does not want to watch my kids, even though we did not ask her, she assumes. We never call her, ever to watch the kids. Oh well, I really do not know where I would have gone anyways. Ds seem better and my dh took him somewhere so once again I get the kids. Same happened yesterday too, guess I really should not expect any different. I just wish I could get out of this mood. I had been doing so well!Well guess I will see you all tomorrow but I do not think it will be great news. But come back anyways, I can always use support!
