Ranch Chicken Salad
13 ounce can 98% fat free chicken breast (well drained)
2 tsp. Hidden Valley Ranch Dry Mix
1/3 cup Kraft Fat Free Mayonnaise
Salt and pepper to taste
Drain canned chicken breast. Place in large bowl and shred with two forks. In a separate bowl, mix mayonnaise, powdered dressing and salt and pepper. Mix until combined. Add to chicken. Serve on crackers or toasted English Muffin.
Makes 4 (1/2 cup) servings at 2 Weight Watchers Points each
Note: Points do not include crackers or muffin (I served my on 1 point for 2 pieces bread, toasted) I also served with grapes for a 4 point lunch.
Variations: Replace ranch dressing with same amount of taco seasoning. You can also add onions or celery.
